DIPPING SAUCES

TARTAR SAUCE

  • Makes about 1 1/4 cup
  • 1 cup mayonnaise
  • 1 teaspoon chopped garlic
  • 1 tablespoon chopped fresh parsley leaves
  • 1 tablespoon chopped green onions
  • 1 tablespoon Creole mustard
  • 1/4 teaspoon hot sauce
  • Salt and freshly ground black pepper to taste

Combine all the ingredients in a mixing bowl and blend well. Refrigerate for at least 1 hour before using.
This is my standby seafood dipping sauce—a little different from tartar sauce, but good just the same.

DIP FOR SEAFOOD

  • 2 cups mayonnaise
  • 1/2 cup ketchup
  • 2 teaspoons prepared horseradish
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon hot sauce

Combine all of the ingredients in a mixing bowl and whisk well. Store in an airtight container in the refrigerator until ready to serve.
