La Reine Cake (The Queen)
Ingredients:
- 1 ½ cups butter or margarine, room temperature
- 1 ½ cups sugar
- 3 eggs
- 2 ½ cups sifted Swan’s cake flour
- 2 tsp baking powder
- ½ tsp salt
- ½ cup plus 3 Tbsp milk
- 1 tsp vanilla extract
- Vanilla Frosting
Steps:
Cream butter in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder, and salt and sift 3 times; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in vanilla. Pour batter into 3 (9-inch) round cake pans that have been lined with wax paper on bottoms only. Bake at 350° for 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 15 minutes; remove from pans, and cool completely. Spread frosting or desired filling between layers and on top and sides of cooled cake.
