Pourciau’s Praline Chicken Nuggets
• 4 skinless, boneless chicken breast
• 4 tablespoons Pourciau’s Pecan Praline Sauce
• 2 cups vegetable oil
• 1 egg, beaten
• ⅓ cup all-purpose fl our
• ⅓ cup water
• 1 ½ teaspoon salt
• ½ teaspoon Cajun seasoning
1. Rinse chicken breast with cold water and pat dry with paper towels.
Cut into 1x1x½ inch pieces.
2. Fill a deep fryer with vegetable oil, about 1/3 full. Heat to medium heat, approx. 335F
3. Place beaten egg and water in a small bowl and mix well. Add flour, Cajun seasoning and salt,
stirring until a smooth batter is formed.
4. Dip chicken pieces in batter and drain off any excess. Add battered chicken, a few
pieces at a time, to the hot oil. Fry about 4 minutes or until golden brown and
done (remove chicken from oil to test). Drain on paper towels.
5. While still hot, Put chicken pieces into deep bowl and add Pourciau’s Pecan Praline Sauce
Stir to coat chicken pieces with sauce and serve hot.
Makes 4 servings
NOTE: Substitute shrimp for chicken and create a gourmet Cajun seafood dish
POURCIAU’S “PRALINTINI” PRALINE MARTINI
• 1 ½ oz (1 shot glass) Vanilla or
Whipped Cream fl avored Vodka
• 1 ½ oz (1 shot glass) ½ and ½ milk or heavy milk
• 2 tablespoons Pourciau’s Pecan Praline Sauce
• splash of coke
• finely chopped pecans (optional)
Coat the Martini Glass rim in Pecans (OPTIONAL)
Take a small plate and spread a thin layer of finely chopped pecans over its surface.
Drizzle praline sauce around rim of glass, covering rim. Turn the glass over and
carefully rotate it in the pecans. (This step takes a little practice. We also put coated
glasses in freezer for short time to firm the sauce coating on the rim and frost the glasses)

Combine the Ingredients
Fill your martini shaker almost to the top with ice, and add your vodka,
milk, Pourciau’s Pecan Praline Sauce, and a splash of coke.
Shake for about 30 seconds.
How much you use of each is completely up to personal preference, and you may
need to play with the total volume a bit to match your martini glass.
Pour the Martini into a Glass
Pour the cocktail into the glass using the shaker strainer to keep ice out and being careful not to drip over your coated rim.
