Jalapeno Macaroni Salad
- 1 (8 oz) package uncooked elbow macaroni
- ¾ cup mayonnaise
- 2 Tbsp cider vinegar
- 1 tsp sugar
- 1 tsp kosher salt
- ¼ tsp white pepper
- ¼ cup green onions, sliced
- 2 jalapeno peppers, seeded and chopped
Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Drain, and rinse under cold running water. In a large bowl, mix together the mayonnaise, vinegar, sugar, salt, pepper, green onions and jalapeno peppers. Stir in the macaroni. Refrigerate until chilled before serving, at least 30 minutes.
