Rice And Pea Pilaf

 

 

Ingredients: 

  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers
  • 3 Tbsp olive oil
  • 4 cups cooked Falcon Medium Grain (kept warm)
  • 1 cup canned or frozen young green peas
  • 1/3 cup toasted slivered almonds
  • Salt and freshly ground black pepper
  • 1 Tbsp chopped parsley or Zatarain's Parsley Flakes
  • 1 Tbsp chopped green onions

Steps: 

In a heavy saucepan, sauté the onions and bell peppers in the olive oil over medium heat for three to four minutes, or until soft. Add the rice, peas and almonds and stir gently to mix well. Remove from heat. Season to taste with salt and black pepper. Add the parsley and green onions. Serve warm. Serves 6 to 8.
