• 1 lb large shrimp, peeled and deveined (tail on - optional)
• 2 tbsp Cajun seasoning
• 2 cups mixed greens

• 1/2 cup Blue Plate Mayonnaise
• 1 tbsp lemon juice
• 2 tbsp fresh cilantro, chopped

Directions

1. Season shrimp with Cajun seasoning. In a skillet over medium heat, cook the shrimp until they are pink and opaque, about 2-3 minutes per side. Set aside to cool.

• 2 hard-boiled eggs, chopped

Directions

2. Dice the celery, red onion, green onions.
3. Mash the potatos.
4. Chop the boiled eggs.
