CONFETTI PEAS & PORK Ingredients: 1/2 lb. boneless pork loin, diced 1/2 cup julienne sliced carrots 1/2 cup julienne sliced bell pepper 3-1/2 cups water 1 package Tony Chachere's Black-eyed Peas & Rice Steps: In a large skillet, brown pork. Drain. Add vegetables and sauté for 3 minutes. Add remaining ingredients. Stir well. Bring to a boil. Reduce heat. Cover. Simmer for 25 minutes, stirring occasionally. Yields 5 to 6 servings.
