Apple Loaf Cake Recipe

This makes 2 loaf cakes, which can be frozen. Completely defrost before serving. Great when warmed a bit in the oven.

  • 2 cups sugar
  • 3 cups all-purpose flour
  • 3 cups chopped apples (peeled)
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 cup chopped pecans or walnuts
  • 1 teaspoon salt
  • 1 ¼ cups vegetable oil
  • 2 eggs
  • 2 teaspoons vanilla

  • Apple Loaf Cake

    1. Preheat the oven to 350 degrees.
    2. Lightly oil two 9x5x3-inch loaf pans. Set aside.
    3. Combine the sugar, flour, apples, baking soda, cinnamon, pecans or walnuts and the salt in a large mixing bowl.
    4. Stir to mix.
    5. Add the vegetable oil, eggs and vanilla and stir to mix well.
    6. Spoon equal amounts of the mixture into the prepared pans.
    7. Bake until a tester inserted into the center of the cakes comes out clean, about 1 hour.
