Shrimp Toast




  • 1 lb Gulf shrimp, peeled and deveined
  • 1 medium onion, chopped
  • ½ tsp salt
  • 1/8 tsp fresh ground pepper
  • 2 egg whites
  • 10 slices of sandwich bread, crusts removed, cut in half at the corners (making 20 triangles)
  • ½ cup fine bread crumbs
  • Vegetable oil for frying 


In a blender or food processor, combine the shrimp, onion, salt and pepper and process until everything is finely chopped. While the machine is still running, add the egg whites slowly allowing the mixture to blend together evenly. Spread shrimp mixture ¼ inch thick onto one side of the triangles. Dip the shrimp covered side of the triangles into the bread crumbs to coat. Place shrimp side up on a baking sheet, cover with plastic wrap and chill. In a large skillet, heat oil no more than 2 inches deep to 360 degrees. Carefully, add the shrimp bread and fry until golden brown on both sides. Remove to paper towels to drain. Serve hot.
