My grandmother Mam Papaul was known for her culinary skills, hospitality and loving heart. She could always be counted on to greet unexpected guests with a warm embrace and a plate of one of her Creole specialties. Had she live during Hurricane Katrina time, she would have gladly opened her home as a refuge for family and friends. Cooking for a crowd and taking care of others were the things she did best. Instructions

Use one pound of any of the following: ground beef (browned); ground pork (browned); chopped chicken livers and gizzards (browned and tenderized). 1. Brown meat and drain. 2. Add Mam Papaul's Louisiana Dirty Rice Mix, 2 cups water and 2 tablespoons butter (optional). Stir. 3. Bring to a boil for one minute. 4. Cover, lower heat. Stir once or twice during cooking. Ready to serve in 25 min.
