Alligator Tenderloin Recipes

Recipe 1: Grilled Alligator Tenderloin with a Spicy Marinade

Ingredients:

  • 1 lb alligator tenderloin
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 garlic cloves, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Marinate the Alligator: In a bowl, mix olive oil, lemon juice, minced garlic, Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper. Whisk well to combine.
  2. Prepare the Tenderloin: Place the alligator tenderloin in a large resealable plastic bag or a shallow dish. Pour the marinade over the tenderloin, making sure it's well-coated. Seal or cover and refrigerate for at least 2 hours, or overnight for deeper flavor.
  3. Preheat the Grill: Preheat your grill to medium-high heat. Oil the grill grates to prevent sticking.
  4. Grill the Tenderloin: Remove the tenderloin from the marinade, letting excess drip off. Place it on the grill and cook for about 4-6 minutes on each side, or until the meat reaches an internal temperature of 160°F (71°C).
  5. Rest and Serve: Let the tenderloin rest for a few minutes before slicing. Garnish with fresh parsley and serve with your choice of sides.

Recipe 2: Pan-Seared Alligator Tenderloin with Garlic Butter Sauce

Ingredients:

  • 1 lb alligator tenderloin, cut into medallions
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 3 garlic cloves, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons white wine (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Season the Tenderloin: Season the alligator medallions with salt and pepper on both sides.
  2. Sear the Alligator: Heat olive oil in a large skillet over medium-high heat. Add the tenderloin medallions and sear for about 2-3 minutes on each side, or until they develop a golden crust. Remove from the skillet and set aside.
  3. Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium. Add butter and minced garlic, sautéing until the garlic is fragrant but not browned. Add the thyme, lemon juice, and white wine (if using). Stir and cook for 1-2 minutes until slightly reduced.
  4. Combine and Serve: Return the alligator medallions to the skillet, spooning the garlic butter sauce over them. Cook for another minute, ensuring they're well-coated with the sauce.
  5. Rest and Garnish: Remove from heat and let sit for a few minutes. Garnish with fresh parsley before serving.

I had never eaten or cooked alligator meat before. My brother talked me into adding a tenderloin to my order. He said it was tail meat. We seasoned it with wild game seasoning and grilled it. Boy was I surprised. We'll be ordering a whole alligator next time.

Meat was excellent, both grilled and roasted in the oven

I used the alligator tenderloin in a gumbo, very tender and kept the integrity of each piece , definitely the way to try a new meat.
