Smothered Pork Chops

Visit your butcher and have him cut some nice thick pork chops. You’ll also need some baby lima beans and of course, a Cajun staple---rice!
When the cold winds blow, this is a meal that will make you happy, happy, happy!
Smothered pork chops
Makes 4 servings
- 3 tablespoons vegetable oil or bacon grease
- 4 pork chops, each about 1 inch thick
- Salt and cayenne pepper to taste
- 1 cup water, or more as needed
- 2 cups thinly sliced onions
- 1 cup chopped green bell peppers
Heat the oil in a large, heavy skillet over medium-high heat. Season the pork chops with salt and cayenne. Add the chops to the skillet and brown well on both sides, turning once or twice. Add the water and scrape the bottom of the pan to loosen any browned bits. Reduce the heat to medium and add the onions and bell peppers. Cover and cook, stirring occasionally, until the vegetables are very soft and golden, and the meat has cooked through, 30 to 40 minutes.
