Almond Cookies




  • 2/3 cup vegetable shortening
  • 1-2/3 cups sugar
  • 2 eggs
  • 1 tsp almond extract
  • 2-1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg white, slightly beaten
  • 1/4 cup sliced almonds 


Preheat the oven to 375 F. Cream the shortening and gradually add the sugar, beating well. Add the eggs and almond extract and beat again. In a separate bowl combine the flour, baking powder, soda, and salt and mix well. Add this mixture to the creamed mixture and mix. Shape the dough into 1-1/2-inch balls, and place them two inches apart on greased cookie sheets. Flatten the dough slightly. Brush the tops with the beaten egg white. Place three almond slices in the center of each cookie. Bake for 15 minutes, or until lightly browned. Cool. Makes about 3 dozen cookies.
