Blue Cheese Meatballs




  • 4 lbs lean ground beef
  • 6 Tbsp snipped chives or finely chopped green onions
  • 1 tsp salt
  • 3/4 tsp coarsely ground black pepper
  • 1/2 tsp chili powder
  • 2 eggs, lightly beaten
  • 1/2 lb blue cheese, crumbled


Mix the beef, chives or green onions, salt, pepper, chili powder and eggs in a bowl. Form the mixture into about 16 meatballs. With your index finger, make a hole in the center of each meatball and insert some of the blue cheese in each. Lightly oil a baking sheet and place the meatballs about an inch apart. Bake at 375 F for 15 to 20 minutes, or until the juices run clear. If you choose to make hamburgers, add the cheese to the mixture and form patties. Grill or broil them as you would regular hamburgers. Yield: 16 meatballs or 8 large hamburger patties.
