Classic Chess Pie




  • 3 cups sugar
  • 1 stick butter or margarine, softened
  • 5 eggs, lightly beaten
  • 3 Tbsp cornmeal
  • 2 tsp pure vanilla extract
  • 1/8 tsp salt
  • 1 cup milk
  • 1 unbaked 9-inch pie shell 


Preheat the oven to 325 F. Combine the sugar and butter in a mixing bowl. Beat at low speed in an electric mixer until blended. Beat in the eggs, cornmeal, vanilla, and salt. Add the milk. Beat at low speed until blended. Pour the mixture into the pie shell. Bake at 325 F for about one hour to one hour and 15 minutes or until the filling sets. Cover the edge of the pie with foil if necessary to prevent over browning. Cool to room temperature before serving. Makes 1 pie (serves 6 to 8).
