Mashed Sweet Potatoes




  • 2 lbs sweet potatoes, peeled and diced
  • 4 Tbsp butter, softened
  • 1/4 cup heavy cream
  • Salt and black pepper


Cook the sweet potatoes in lightly salted water, until tender. Drain. Transfer them to a food processor and puree, adding the butter and cream. Scrape into a bowl and season with salt and pepper. Serves 6.
