Sweet Potatoes with Sausage and Pecans
- 3 lbs sweet potatoes
- 1 lb pork sausage, casing removed
- 2 Tbsp butter
- 1/3 cup packed brown sugar
- ¾ cup chopped pecans
- 1 tsp ground cinnamon
Preheat oven to 350 degrees F. Form sausage into round patties. Place patties in a large, deep skillet. Cook over medium high heat until brown. Drain and set aside. Wash yams, prick with fork and place on baking sheet. Bake for 1 hour or until yams are soft. Set aside to cool. Peel cooled yams and cut into 1 to 2 inch cubes. In a 2 ½ quart casserole dish, add yams, sausage, butter, brown sugar, pecans and cinnamon. Mix thoroughly, cover and bake for 30 to 40 minutes or until hot and bubbly.
