  • 1 lb ground beef
  • 1 lb pork sausage, casing removed
  • 1 ½ cups cornmeal
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp salt
  • 1 tsp cayenne pepper
  • ¾ cup vegetable juice cocktail (V8)
  • ½ cup all-purpose flour
  • 4 cloves garlic, minced

  • 5 cups vegetable juice cocktail (V8)
  • 2 tsp chili powder
  • 2 tsp cumin
  • 2 tsp salt

In a large bowl, combine all ingredients for the balls and mix well. Best to mix with your hands so all ingredients are evenly distributed throughout. Shape mixture into 1 ½ inch balls and arrange in a large baking pan. In a separate bowl, combine all the ingredients for the sauce and mix well. Pour the sauce over the tamale balls and bake at 300 degrees for 2 hours or until cooked through, stirring gently after 1 ½ hours.
