Lemon Chess Pies




  • 3 eggs
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 5-1/3 Tbsp butter or margarine, melted
  • 1/3 cup sour cream
  • 1 Tbsp cornmeal
  • 1 Tbsp fresh lemon juice
  • 1/2 tsp pure vanilla extract
  • 1 unbaked 9-inch pie shell 


Preheat the oven to 350 F. Beat the eggs and sugar in a mixing bowl. Add the corn syrup, butter, sour cream, cornmeal, lemon juice, and vanilla. Mix thoroughly. Pour the mixture into the pie shell. Bake for 45 to 50 minutes or until the mixture just sets. Cool slightly before serving. Makes 1 pie (serves 6 to 8).
