Crawfish & Zucchine
- 1 large onion diced
- 3 Tbsp olive oil
- 1 Tbsp minced garlic
- 1 large zucchini diced
- 2 bell peppers diced
- 12 oz Louisiana Crawfish Tails
- 1 can diced tomatoes chili & onion
- 1 can cream of chicken soup
- 1 package spaghetti
In a large pot place the olive oil in the pot on high heat. Add the diced onion and cook until the onion caramelizes. Add the diced bell peppers and cook until it is tender. Add the minced garlic. Next add the diced zucchini cook until it is tender. Add the crawfish, cream of chicken soup, and the can of diced tomatoes and cook for about 15 minutes. Cook the spaghetti as per the direction on the package. Serve the zucchini over the spaghetti and enjoy. It’s great.
